Mini Meat Pies

Ingredients:

  • 1 red onion, small diced
  • 500g Australian beef mince
  • 1 tablespoon plain flour
  • 3 cups Beef Style Liquid Stock
  • 4 sheets puff pastry
  • 1 egg, lightly beaten

Method:

  1. Grease and heat a large frypan over medium heat. Add the diced red onion and stir until softened.
  2. Add the beef mince, cooking and stirring constantly until browned all over.
  3. In a jug, blend the flour with ¼ cup of the stock to form a smooth paste, then stir in the remaining stock.
  4. Add the stock mixture to the pan, stirring continuously until the mixture boils and thickens. Let it simmer for 1 minute, then remove from heat. Season to taste with salt, pepper, and mixed herbs. Cover and allow to cool.
  5. Preheat your oven to 220°C (428°F).
  6. Cut 15 x 8cm rounds from the slightly thawed puff pastry sheets. Press these rounds into greased muffin pans.
  7. Spoon the cooled meat filling into the pastry cases, brushing the edges of the pastry with beaten egg.
  8. Cut 15 x 7cm rounds from the remaining pastry sheets. Place these rounds over the filling, pressing the edges to seal.
  9. Brush the tops with the beaten egg, then cut a small slit in the centre of each pie.
  10. Bake in the preheated oven for 12-15 minutes, or until the pies are puffed and golden.
