The Secret Ingredient Behind Our Award-Winning Pickles
In a world of loud flavours and sharp vinegar shocks, we’ve always preferred pickles that whisper. The kind that brings freshness and light to the plate, not a wince. At Quincey Jones Jelly Preserves, we love that moment when a bite of something tangy makes everything else taste more alive — but without overpowering what’s already there.
That philosophy is at the heart of our new Carrot & Ginger Pickle. It’s a simple idea: finely shredded Australian carrots, just enough fresh ginger for warmth, and a clean, balanced brine made with rice wine vinegar. The result is bright, aromatic and refreshing — a pickle that lifts food rather than competes with it.
The Beauty of a Gentle Brine
Rice wine vinegar is the quiet achiever of the pickling world. Softer and rounder than standard vinegars, it brings a mild sweetness that allows vegetables to hold their natural flavour. It’s the same brine we use in our Preserved Lemons with Rosemary — a jar that recently took out First Prize at the Royal Melbourne Show — and it gives both preserves their signature brightness and balance.
The Royal Melbourne Show has become a bit of a family tradition for us. Each year, we make the trip together — my daughters wide-eyed at the rides and showbags, and me just as excited to see our preserves displayed in the glass cases among so many other incredible producers. Winning First Prize for our Preserved Lemons with Rosemary this year was a proud moment — not just for the award itself, but for what it represents: doing things properly, and sharing that journey with family.
Simple Food, Done Well
We make our pickles in small batches in Echuca–Moama, with produce grown under Australian skies. Every jar is hand-filled, every batch tasted. Because when you respect ingredients — when you coax rather than command — you get flavours that sing in their own key.
