Jam Filled Easter Egg Biscuits

Jam-Filled Easter Egg Biscuits
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup jam (any flavour you prefer Our QJJ Apricot Jam will have the colour of egg yolk for an easter egg look or you could use our QJJ Easter Jam for a chocolatey touch but any QJJ Jam will do amazingly! )
- Icing sugar, for dusting
Instructions:
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Add in the eggs and vanilla extract, and mix until well combined.
- In a separate mixing bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough in half and shape each half into a disk. Wrap the disks in plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 180°C. Line a baking sheet with baking paper.
- Roll out one disk of dough on a lightly floured surface to a thickness of about 1/4 inch.
- Use an egg-shaped "cookie-cutter" (nay 'biscuit-cutter) to cut out biscuits from the dough. Place the biscuits on the prepared baking sheet.
- Spoon a teaspoon of jam into the centre of each biscuit.
- Roll out the other disk of dough and cut out egg-shaped biscuits again.
- Cut out a small hole in the centre of each egg-shaped biscuit with a small cookie cutter or a knife.
- Place the cut-out biscuit on top of the jam-filled biscuits and press the edges together lightly.
- Bake the biscuits for 10-12 minutes or until lightly golden.
- Let the biscuits cool for a few minutes before transferring them to a wire rack to cool completely.
- Dust the biscuits with icing sugar before serving. Enjoy!
