Fig Toasties

Moving into Autumn from Summer needn't be thing of sadness. Indeed for most of Australia, the weather is at its most comfortable and enjoyable in Autumn. Autumn means not needing to give yourself third degree burns from the steering wheel of your parked car.  Autumn also mean the arrival of scrumptious Australian figs! 

That's right this is the best time to enjoy and use Australian Figs so it means the best time of year for Quincey Jones Preserves'Fig Jam and also our Caramelised Fig Chutney.

With that in mind we have a recipe we just want you try with these truly majestic products. It is super simple; super easy, yet will have eager mouths clamouring for more. So grab your jar of Quincey Jones Fig Jam or Caramelised Fig & Ginger Chutney and get ready to make some:


Fig Toasties!


Ingredients (For 8 Servings)

1 Jar of Quincey Jones Fig Jam or Quincey Jones Caramelised Fig & Ginger Chutney (both of these products will create equally delicious results, you can choose one or the other)

1/2 tablespoon crushed red chilli flakes (or more or less according to your spicy preference)

1 tablespoon red wine vinegar

Pinch of sea salt

12 slices white sandwich bread (or your favourite bread)

225 grams. sharp cheddar cheese, grated

3 tablespoons butter, room temperature

Preparation

Step 1

Preheat oven to 250°. Mix jam, chilli flakes, and vinegar in a small bowl; season with salt. Set half of spicy Fig jam or Caramelised Fig Chutney aside.

Step 2

Spread 6 slices of bread with remaining spicy fig jam and top with cheddar and remaining 6 slices of bread. Spread outside of sandwiches with butter. Heat a large skillet/frying pan over medium heat (or use a sandwich press if you have one). Working in 2 batches, cook sandwiches, pressing down firmly, until golden brown and cheese is melted, about 1 minute per side. Transfer to a wire rack set inside a baking sheet and keep warm in oven until ready to serve.

Step 3

Cut each sandwich into 4 triangles and serve with reserved QJJ Fig jam or Caramelised Fig & Ginger Chutney for dipping.

Step 4

Watch them disappear before your eyes! 

You could even try pairing these Fig Toasties with a lovely white wine; like a King Valley Pinot Gris, Western Australian Verdelho, Hunter Valley aged Sémillon, South Australian un-oaked Chardonnay or even a Mornington Peninsula Pinot Noir ;-)
