Every season, as we cook our award-winning quince products, something magical happens. As the quinces slowly soften, they release a fragrant ruby-gold liquid packed with natural fruit sugars, perfume and flavour.
Most people would let it go to waste.
We spend seven long hours gently reducing it with whole cinnamon, star anise, cardamom pods, vanilla bean, fresh ginger and a touch of dark treacle. Slowly, the syrup thickens and the spices weave themselves through the fruit, creating a rich, glossy Sticky Quince Syrup with remarkable depth and complexity.
Sweet, tangy and beautifully balanced, it’s equally at home drizzled over a wedge of blue cheese as it is brushed onto a roast duck or roast pork straight from the oven. A spoonful over vanilla ice cream or baked cheesecake turns a simple dessert into something worthy of a special occasion.
This is one of those old-world pantry staples that was almost forgotten. We’ve simply brought it back.
Like everything at Quincey Jones Jelly Preserves, it is made in small batches in Echuca-Moama using Australian fruit and traditional methods. No shortcuts. Just time, patience and a little respect for remarkable fruit.
